While fish can serve as the key dietary way to obtain the long-chain omega-3s eicosapentaenoic acid and docosahexaenoic acid, which were shown to be essential in supporting brain health, low intake of eicosapentaenoic acid and docosahexaenoic acid in vegetarians doesn’t adversely affect mood, according to a new research (Nutr J. 2010;9:26. DOI:10.1186/1475-2891-9-26).
A study team from Arizona State University conducted a cross-sectional study to compare the mood of vegetarians who never eat fish with the mood of healthy omnivorous adults.
A total of 138 healthy Seventh Day Adventist adults living in Arizona and California (64 vegetarians and 79 non-vegetarians) were enrolled in the study and completed a health history questionnaire, food frequency questionnaire and two psychometric tests, the Depression Anxiety Stress Scale and the Profile of Mood States..
Vegetarians had significantly lower mean intakes of eicosapentaenoic acid, docosahexaenoic acid and the omega-6 arachidonic acid; they had higher intakes of the omega-3 alpha-linolenic acid and the omega-6 linoleic acid.
“Seed oils are the richest sources of α-linolenic acid, notably those of rapeseed (canola), soybeans, walnuts, flaxseed (Linseed oil), clary sage seeds, perilla, chia, and hemp.”
However, the vegetarians also reported significantly less negative emotion than omnivores in psychometric tests. Mean total psychometric scores were positively in connection with the mean intakes of eicosapentaenoic acid, docosahexaenoic acid and arachidonic acid , and inversely linked to alpha-linolenic acid and linolenic acid intake.
The research team noted there is also the possibility that vegetarians may make better dietary choices and may generally be healthier and happier.

Italian Spaghetti with Zucchini
Ingredients:
* 17 oz. Spaghetti
* 24 oz. Of thin sliced zucchini
* 1 / 2 cup walnuts oil
* Some basil leaves
* 2 tablespoons of yeast flakes
* Salt and pepper
In a skillet or frying pan heat the oil and when hot, add garlic and zucchini. Raise heat and stir often to complete their cooking. They should be golden and crispy outside and tender inside. Cook the pasta, drain and sauté in pan with zucchini, basil and yeast. Serve immediately.
Zucchini contain fewer calories and have no fat. But they are a good source of potassium, e vitamin, ascorbic acid, folate, lutein and zeaxanthin.
Many of these nutrients are very sensitive to heat and to enjoy their full benefits you should look for a quick way to cook or even eat raw in salads.
From the therapeutic standpoint, zucchini have laxative, refreshing, anti-inflammatory, diuretic and detoxifying action.

Foods to Try While Doing a Detox Diet (May 17, 2009 )
It is important that your body releases toxins every other month to keep your system fresh and on track. Even while on a regular and healthy diet, it is important for your body to be released of the toxins that have built up in your body due to both internal and external factors. Internal factors are items you have ingested including foods, beverages and alcohol, medicines and herbs, smoking and any other factors. External factors include air pollution, various fumes, smoke and lead.
Eating antioxidents on a daily basis can help couteract the effects of these toxins on your body. Some examples of antioxident-rich foods include blueberries, spinich, tomatoes, soy and whole grains. Many fruits also are rich in antioxidents, including melon, strawberries, mango, and red grapes.
It’s important to also note which foods can contain toxins that can build up in your body. These include potatoes, honey (depending on what the bee ate), zucchini and fruit seeds. You’ll want to either eliminate some of these foods or be sure to take antioxident-rich foods at the same time to counteract the effects of the natural toxins which is a form of a detox in itself.
During a stricter version of detox diets, you’ll want to stick to certain foods for two days in a row. Make sure these foods include green vegetables (excluding zucchini), lean white meats such as chicken and turkey, tuna and other low-mercury fish, eggs, and citrus fruits such as oranges, grapefruit and pineapple. Melon can be used as a subsitute for citrus fruits. Be sure to avoid sugar and marinades during these two days. You can include olive oil and lemon juice as a condiment or used for cooking purposes. Limit your salt intake to one teaspoon per day and drinking plenty of water during the detox.

There are a number of things that can affect the health of our eyes, some of which are out of our control and others that we can try and avoid. Some things that potentially increase the risk of eye problems include age, obesity, smoking, excessive exposure to sunlight, and even gender.
Whilst some people will be more at risk than others when it comes to poor eye health, it has been proven that nutrition does play an important role in the health of our vision, and this is therefore that should be taken into account if you’re interested in preventing age related deterioration.
Studies have shown that certain foods contain antioxidants that can are particularly beneficial for our eyes. However, not everyone manages to eat as much fresh produce as they should to get these benefits. Often a busy lifestyle or other factors can affect the ability to eat a balanced diet. However, the wide range supplements that are on the market today have made it easier for consumers to get their recommended daily allowance of vitamins and minerals, although those taking supplements should still try and eat as well as they can in order to maximize the benefits.
Some important supplements that have been identified in relation to eye health are vitamins A, C, and E. These are the antioxidant vitamins.
Vitamin A is well known for its’ role in night vision, but it is also important for preventing night blindness is pregnant women, and the health of our skin, hair and mucous membranes. It is found in animal products like liver, whole eggs, and milk.
Vitamin C helps reduce the risk of developing glaucoma, macular degeneration or cataracts. Bioflavanoids are available in combination with vitamin C in some supplements, and this is because they help the body absorb it. Vitamin E also helps reduce the risk of cataracts and macular degeneration.
Other supplements that contribute to eye health include beta carotene, lutein, zinc oxide, selenium, and cupric oxide. Lutein is not known as some other supplements, but it is central to eye health. It is found in the retina, eye lens, and macula. People who smoke should be careful they get enough lutein, as smoking can affect its’ levels.
Smokers should also be aware that some studies have found that some of those participating who took beta carotene supplements and smoked were at risk of several diseases. These were only small studies however, but care should still be taken.
